
The Rurika Factory in central Nyeri is part of the Farmer Cooperative Societies (FCS). Here, coffee is mainly grown by small-scale farmers. They hand-pick ripe coffee cherries in the morning and transport them to the Rurika Factory. The coffee cherries are then depulped using machines with the help of clean water. They’re then fully fermented overnight in tanks.
The coffee is continuously monitored to assess the fermentation process. Once it meets requirements, it’s further sorted to remove floating beans, ensuring only the densest, heaviest, and highest-quality beans make it into the processing lot.
Finally, the washed Kenyan coffee is sun-dried on raised beds until it reaches approximately 11% moisture content. These coffee lots are then packed and sent to dry mills, where they’re hulled, sorted by size and density, stored, and prepared for sale through the Nairobi Coffee Exchange (Kenya’s capital).
Kenya’s coffee grading system is based on size, shape, color, and uniformity. The larger the bean, the higher its value. The best grade is AA, followed by E, PB, AB, C, TT, T, and MH/ML respectively.
This Rurika Factory coffee sample is graded as the highest quality AA (equivalent to Vietnam’s screen size 18 – approximately 7.2mm screen diameter).
FLAVOR PROFILE OF KENYA NYERI OTHAYA FCS RURIKA FACTORY COFFEE
Kenyan coffee is very easy to identify: Nyeri Othaya has moderate acidity making it very drinkable. Rich and full-bodied from the first sip with plum, grape, berry, and citrus zest notes that aren’t harsh.
