Over the past two years, the Hario Switch has appeared frequently at the World Coffee Championships and brought home multiple victories for competing baristas. Interestingly, while it was designed with a simple on/off valve to make brewing more accessible, the Switch has become the most versatile dripper in its category.
“All because of that one valve.”
There are essentially 3 different ways to brew with the Hario Switch:
- Single immersion only: Close the valve. Add 20g of ground coffee and pour 240ml of hot water into the dripper. Wait 2 minutes, then open the valve to release. This is Hario’s recommended recipe in the user guide for everyday users.
- Use it like a standard V60: Brew with the valve open and water flows through immediately as you pour.
- Hybrid method: Immerse during the first stage (valve closed) and let flow during the second — or the reverse. Most competitive baristas using the Hario Switch apply this more complex approach.
Each of these methods, combined with different coffees, grind sizes, water temperatures, and timing, can produce a wide range of interesting results. Feel free to explore and find the approach that works best for you.
HOW THE HARIO SWITCH WORKS
HARIO SWITCH CONSTRUCTION
Two basic components: the dripper and the Switch base.
STEEL BALL ON/OFF MECHANISM
The ball lifts when the valve is pressed, releasing the coffee.
HARIO IMMERSION SWITCH FEATURES
- A Hario 02 glass dripper paired with a separate Switch base: Each part can be replaced individually if accidentally broken — no need to repurchase the full set.
- Suitable for all pour over enthusiasts: Easy to brew from simple to complex methods. Whether you’re a beginner or a professional barista, the Hario Switch has a recipe for you.

TETSU KASUYA’S LEGENDARY HYBRID RECIPE — 2016 WORLD BREWERS CUP CHAMPION WITH THE HARIO SWITCH
This Japanese champion created a recipe he calls “The Devil’s Recipe — and also the God’s Recipe.” Quite a name, right?
This method eliminates unpleasant flavors (bitterness, astringency) that emerge in the later stages of extraction by using lower water temperature for the final 60% of water. The resulting cup is sweeter and more balanced compared to a standard high-temperature brew.
Give it a try — with the Hario Switch, of course.
(He is also the creator of the famous Tetsu Kasuya 4:6 method — worth looking up on YouTube.)
Preparation: 20g of ground coffee (grind to a size where all the water drains within 3 minutes), heat water to 90–93°C.
- Step 1: Rinse the dripper and paper filter with hot water, then add 20g of coffee.
- Step 2: Open the valve (allowing water to flow through), pour 60ml of water for the bloom.
- Step 3: At 30 seconds, pour another 60ml and continue with the valve open.
- Step 4: Add cold water to the kettle to bring the temperature down to approximately 70°C.
- Step 5: At 1 minute 15 seconds, close the valve and pour 160ml of 70°C water into the dripper — the coffee will now steep in the water.
- Step 6: At 1 minute 45 seconds, open the valve to let the coffee drain.
- Step 7: By 3 minutes, all the coffee should have drained. If water is still remaining, close the valve to stop extraction. Note to grind coarser next time. (If the coffee drains too fast, grind finer.)
- Step 8: Enjoy!
MATT WINTON’S HARIO SWITCH RECIPE — 2021 WORLD BREWERS CUP CHAMPION

- Step 3: At 30 seconds, close the valve and continue pouring until you reach 240ml total.
- Step 4: At 3 minutes, open the valve to let the coffee drain.
- Step 5: Enjoy!
