With a conventional scale for pour over brewing, users control the ratio based on the initial coffee weight and the total amount of water poured in. For example, a 1:15 ratio means 1g of coffee to 15g of water. This simple convention makes recipes easy to follow for most brewers who use a digital scale.
However, this measurement approach has one key limitation: it doesn’t tell you the actual amount of water that was extracted into the cup. The total water poured in includes the water that remains absorbed in the coffee grounds — and every coffee absorbs water differently.
In 2017, Timemore researched and developed the Mirror 2 scale with a dedicated dripper stand for pour over brewing. It could separate the total water poured from the actual water extracted into the cup, and also connected to a mobile app to save and share brew profiles with the Timemore community. The Mirror 2 was aimed mainly at competitive professional baristas, so its user base remained relatively small.
By 2025, everyday users had grown much more knowledgeable about and interested in extraction. Timemore revisited the concept and launched the Timemore Duo, based on the Mirror 2 design. The price is also much more accessible, as Timemore streamlined the manufacturing process and removed the Bluetooth mobile connectivity feature.
COFFEE EXTRACTION THEORY
During brewing, water extracts different flavor compounds in a set order: acids and fats first, then sugars, and finally plant fiber.
Sour / Oils → Sweet / Sugars → Bitter / Astringency
- The first compounds to be extracted are acids and fats: Acids contribute sourness. They are the simplest compounds molecularly, so water dissolves them first. Fats are also easily washed out of the coffee, contributing to body and richness. Many aromatic compounds — floral and fruity notes — are also extracted at this stage.
- Sugars are extracted next: Sugars are molecularly more complex than acids, so water needs more time to dissolve them fully.
- Finally, water begins to break down dry, bitter plant fiber: In the right proportion, this bitterness adds balance and depth to the cup. Too much of it and the coffee becomes unpleasantly bitter and astringent.
EXTRACTION SEQUENCE OVER TIME
Acidic and fatty compounds are extracted first, followed by sweetness, and finally bitterness from plant fiber. Control the ratio to achieve the most balanced cup possible.
POUR RATE INFLUENCES EXTRACTION
Pouring slowly during the sweetness extraction phase, then pouring faster and more aggressively toward the end — cutting the water when the target extraction weight is reached — helps minimize bitterness.
The extraction process is divided into four stages:
- Stage 1: Wetting the coffee grounds to prepare for better water absorption.
- Stage 2: Extracting acidity and fats, using a moderate pour rate.
- Stage 3: Extracting sweetness and fruit flavors, using a slower, gentler pour rate.
- Stage 4: Final bitterness extraction — use a faster, heavier pour to accelerate extraction, then cut the water to keep the flavor cleaner.
Based on this theory, the Timemore Duo helps users fine-tune their coffee’s flavor by adjusting the pour rate and actual extraction ratio at each stage — shifting the flavor toward a specific target. Add a little more sweetness, dial back the bitterness, or the other way around…
THE DIFFERENCE BETWEEN FOCUSING ON ACTUAL EXTRACTION RATIO VS THE TRADITIONAL RATIO
- When using the traditional total water in / coffee weight ratio: The flow in the final stage tends to slow down because the water pressure can’t push through the saturated grounds fast enough. Extraction slows to a crawl and can lead to over-extraction, resulting in unpleasant bitterness and astringency.
- Focusing on actual extracted water / coffee weight ratio: There is no limit on how much water goes in — only a limit on how much comes out. You can freely pour a lot of additional water to accelerate extraction in the final stage, then cut the flow and discard the remaining water still sitting in the dripper. This locks in the calculated ratio, shortens brew time, and reduces the chance of unpleasant flavors being pulled from the coffee.
