Hacienda San Ignacio is a coffee farm in the Palmichal district of Acosta county in San José province, Costa Rica. At an elevation of ~1500m above sea level with a unique microclimate, this location is perfect for growing high-quality coffee.
For the past 7 years, Hacienda San Ignacio has been part of the FONAFIFO-MINAE forest conservation program. More than half the farm is dedicated to protecting native flora and fauna. Extensive forest areas separate the coffee lots and serve as biological corridors for this ecosystem.
Facing challenges with productivity and sustainability amid climate change, Hacienda San Ignacio has been at the forefront of using new hybrid coffee varieties like Marsellesa, H1, H12, and H3.
The coffee we have here is a product of their innovation process.
MARSELLESA COFFEE VARIETY GROWN IN COSTA RICA
Marsellesa is a hybrid coffee variety created from Sarchimor and Caturra, designed to increase resistance to leaf rust disease and improve coffee quality. Notably, while Catuai and Caturra typically shed heavily during heavy rains at harvest time, Marsellesa shows excellent resistance.
Therefore, this variety can truly be said to be designed specifically for Costa Rica.
Marsellesa is characterized by high acidity and juicy fruit flavors.
INFORMATION ABOUT COSTA RICA 62H FERMENTED NATURAL DRY PROCESSED COFFEE
After harvesting and sorting, the coffee undergoes slow fermentation for 62 hours. The fermentation tank is fitted with a one-way valve, allowing oxygen removal to create an ideal environment for fermentation.
After this process, the coffee is sun-dried for about 30 days on raised beds before being moved to storage.
FLAVOR PROFILE OF COSTA RICA HACIENDA SAN IGNACIO 62H COFFEE
Because the 62-hour fermentation is controlled at a slow pace, Costa Rica Hacienda San Ignacio tends to resemble honey-processed coffee. This means the drinking experience feels very clean (almost like wet processing), while the flavor remains balanced.
This coffee is characterized by milk chocolate flavor with juicy red fruits (like strawberry and berry). The aftertaste is gently sweet.

- Best enjoyed within: 3 months unopened and 1 month after first opening. If not using immediately, can store in freezer (Frozen coffee can last up to 1 year while staying fresh—When removing, you can grind immediately without waiting to thaw)
- Recommend opening the coffee bag one day before use to release gases and pressure from the package, then resealing so the coffee aroma is more fragrant and the flavor more rounded.
