Co-fermentation remains a controversial processing method to this day. And yet, despite that, the reality is that it is steadily becoming an important part of the coffee industry. These coffees are showing up at trade shows and in specialty cafés around the world. It may not be long before co-fermentation becomes a mainstream processing method across all coffee-growing countries.

ABOUT THE CO-FERMENTATION & HONEY PROCESSING METHOD
Co-Fermentation & Honey is a coffee processed using the honey method combined with co-fermentation. The fresh coffee cherries are pulped and then fermented alongside natural fruits such as peach, strawberry, passionfruit, watermelon, cacao, and more.
Fermentation lasts a minimum of 24 hours in sealed tanks. Once the desired pH level, Brix reading, or flavor profile is reached, the coffee is dried on raised beds to remove moisture.
The name Pesca Li is a combination of two fruits that define the flavor profile: Pesca (Spanish) for peach and Li, short for lychee.

The Colombia Quindio Pesca Li honey processed coffee carries a dry aroma of peach, lychee, strawberry jam, and a gentle sweetness of floral notes.
On the palate, you’ll find a vibrant combination of peach candy, fresh lychee, and strawberry, accompanied by a hint of dried apricot and a touch of rose creating a flavor that is sweet and wonderfully juicy.

- Roast level: Light
- Best suited for: Pour over, Cold brew
- Rest before use: Approximately 10–15 days from roast date.
- Best enjoyed within: 3 months unopened and 1 month from first opening. If not using right away, the beans can be stored in the freezer (freezing can extend freshness up to 1 year — beans can be ground directly from frozen without thawing).
- It is recommended to open the bag one day before use to release gas and pressure, then reseal — this allows the flavors to open up and become more rounded.
- Whole bean. If you’d like it ground, please let iCup know which brewing equipment you use so we can select the appropriate grind size. We encourage customers to own a grinder and grind fresh for each brew.
