The name of the Lucy processing station traces back to a human ancestor fossil discovered in Ethiopia, dating back approximately 3.2 million years. It is considered human remains because the structure of the knees and spine led researchers to conclude that Lucy was capable of walking upright on two feet.
The founders named the station Lucy as a way of reminding the world that Ethiopia is also the very place where humanity first discovered the coffee bean. No matter how many varieties of coffee exist around the world, they all trace their origins back to Ethiopia.

FLAVOR PROFILE OF BABY GESHA WASHED FROM THE LUCY PROCESSING STATION
The Gesha variety from Bench Maji, originating in Ethiopia, is characterized by floral notes and juicy orange peel. The black tea finish can shift slightly toward light chocolate with a finer grind or higher water temperature. Clean sweetness and well-balanced acidity leave a very pleasant feeling after each sip.

- Best enjoyed within: 3 months unopened and 1 month from first opening. If not using right away, the beans can be stored in the freezer (freezing can extend freshness up to 1 year — beans can be ground directly from frozen without thawing).
- It is recommended to open the bag one day before use to release gas and pressure, then reseal — this allows the flavors to open up and become more rounded.
