5 MISTAKES THAT MAKE YOUR POUR OVER FILTER COFFEE TASTE WORSE THAN A BARISTA’S AT THE CAFÉ

Anyone who loves filter coffee has probably faced this frustrating situation: It tastes amazing at the café, but when you buy beans and brew at home, it just doesn’t hit the same.

The reason seems complicated but is actually quite simple: Baristas use proper brewing tools—they’re not relying on divine intervention like most of us. One small mistake and your whole cup is ruined.

WHAT ARE THESE MISTAKES? YOU SPENT GOOD MONEY ON QUALITY COFFEE—DON’T SKIMP ON 2 MINUTES TO READ THIS!

1. Using Pre-Ground Coffee

Anyone who asks the café to grind their beans to take home will get a bad cup 100% of the time. Coffee absorbs odors and moisture, so after grinding, it loses 50% of its aroma within 15 minutes. By the time morning turns to afternoon, it’s already gone stale. Many people ruin their own coffee then turn around and blame the café for selling bad beans. Sad!

2. Being Cheap About Buying a Good Grinder

The grinder is the most important factor. Choose a grinder with a low fines percentage below 20% like the Comandante or 1Zpresso K-series. It will preserve the coffee’s original flavor just as well as a hundred-million-dong Mahlkönig EK43 at the café. If you’re on a budget, at minimum choose steel burrs and absolutely skip ceramic burr grinders. Where to buy? Just google it!

3. Not Using a Dedicated Scale

How many grams of coffee are you brewing? How much for the bloom? How many ml of water per pour? How long should it take? Without a scale, you’re basically fumbling in the dark. You’ll eventually get there through trial and error, but it’ll be much faster if you have the right tools providing the information you need. Once you nail the brew, just follow those same numbers next time. Where to buy? Google it, friends!

4. Not Caring About Water Temperature

In winter, use higher temperature than summer; dark roasts need lower temperature than light roasts; want to reduce heaviness, lower the water temperature… Many people just pour hot water without realizing that coffee brewed at 96°C is completely different from 90°C. Heaven and hell are separated by just a few degrees. Get an electric kettle with a narrow spout that controls temperature precisely to 0.1°C, or at least a thermometer. Where to buy? Google it, friends!

5. Not Caring About Water Source

Aquafina is soft and sweet while Lavie has more minerals that can cause a dry mouth sensation. Brew coffee with them and you’ll get two different cups. Getting into the technical details would lose most people. So here’s the simple version: For filter coffee, choose water with TDS below 70ppm and you’re golden. If you have an RO filter system at home, just add a remineralization cartridge and you’re good. Where to buy a TDS meter? Google it, friends! Or if you’re lazy, just buy Aquafina for convenience.
