Shakiso is a district in the Guji zone of Oromia in southern Ethiopia. This area has high altitude, rich soil, and steady, plentiful rainfall. All these factors combined with the long experience of many processing stations have greatly contributed to the strong reputation of Guji coffee.
This Guji Shakiso coffee is processed using the natural sun-drying method. After picking, the cherries are carefully sorted to select the ripest ones. Then they’re sun-dried on raised beds for about 19-20 days until they reach the standard moisture level (10-11%) before going into storage.
Guji Shakiso coffee has sweet citrus fruit flavors with a bright, pleasant acidity that lingers on the palate.
