The Idido mill — previously known as the Misty Valley mill — has a long history of serving farmers in Yirgacheffe through both traditional processing methods and meticulous experimentation. While Yirgacheffe is widely known for its washed coffees, Idido has gradually shifted the landscape by focusing on distinctive naturally processed lots.
This year, Idido brings customers a coffee fermented with ORO yeast — an extremely popular yeast strain in the food industry, widely used in bread, beer, and wine production.
ORO FERMENTATION PROCESSING METHOD
Oro yeast (Saccharomyces Cerevisiae) is used in coffee processing to control fermentation and enhance flavor quality. This yeast strain is produced by the French company Lalcafe.
After years of research across various technical centers and the results of trials at wet processing mills around the world, Oro yeast was selected based on its ability to optimize processing efficiency.
During fermentation, Oro plays a superior protective and controlling role by competing against native flora and potentially damaging microorganisms — ensuring consistency and quality throughout the coffee fermentation process.
FLAVOR PROFILE OF ETHIOPIA ORO YEAST IDIDO
A very distinct cacao nib character dominates, with dried fruit aromas, a hint of florals, and a wine-like quality. The sweet and fragrant finish lingers impressively long in the mouth — creating an overall profile that is harmonious and layered with depth.

ORO YEAST IDIDO GREEN BEANS
Small beans, unevenly colored, deep yellow with a clearly noticeable cacao aroma.
ORO YEAST IDIDO ROASTED BEANS
Considerably expanded beans, with noticeably more even coloring compared to the green state.

- Roast level: Medium Light
- Best suited for: Pour over, Aeropress
- Rest before use: Approximately 10–15 days from roast date.
- Best enjoyed within: 3 months unopened and 1 month from first opening. If not using right away, the beans can be stored in the freezer (freezing can extend freshness up to 1 year — beans can be ground directly from frozen without thawing).
- It is recommended to open the bag one day before use to release gas and pressure, then reseal — this allows the flavors to open up and become more rounded.
- Whole bean. If you’d like it ground, please let iCup know which brewing equipment you use so we can select the appropriate grind size. We encourage customers to own a grinder and grind fresh for each brew.
