Cauca is a province in southwestern Colombia nestled in the Andes mountain range. Its proximity to the equator means temperatures remain stable year-round. High altitude, frequent rainfall, and fertile volcanic soil create excellent growing conditions for coffee. As a result, Cauca consistently produces high-quality lots.
CAUCA JELLY LYCHEE IS A BLEND OF 50% GESHA AND 50% CASTILLO
Castillo is a hybrid variety developed from Caturra and Timor Hybrid, created in Colombia in 2005. It accounts for up to 40% of all Colombian coffee production. Castillo is known for its smoothness, fruity floral aroma, and well-balanced mild acidity.
Gesha is the legendary variety — renowned for its signature flavors of jasmine, black tea, and bergamot orange.
LYCHEE WINE YEAST WASHED PROCESSING METHOD
The ripest Castillo and Gesha cherries are hand-picked and transported to the processing facility in sealed bags to preserve freshness. Upon arrival, they are filtered to remove impurities.
The cherries then undergo a dry fermentation in sealed bags for 72 hours — whole cherries, skin intact — alongside lychee fruit and Saccharomyces cerevisiae wine yeast. Once fermentation is complete, the coffee is pulped and then goes through a washing process to remove the remaining mucilage from the surface. The beans are then dried on raised beds until the desired moisture level is reached, and stored for 2 months before going to market.
The combination of wine yeast and lychee during fermentation produces aromatic compounds including geraniol, linalool, and isoamyl acetate — delivering the characteristic lychee and peach flavor profile.
FLAVOR PROFILE OF COLOMBIA CAUCA JELLY LYCHEE
The dry aroma opens prominently with fresh lychee, white peach, bergamot orange, and white florals. The moment hot water hits the grounds, the aroma bursts with lychee, lemon, and a delicate floral whisper.
The very first sip delivers a refreshingly sweet lychee quality, lychee fruit tea, and peach jelly — all woven together with a hint of lemon peel and rose. The bergamot and lychee linger beautifully in a clean, invigorating finish.
As the cup cools, the flavors soften and mellow. Red fruit and juicy lychee come forward even more.

- Rest before use: Approximately 10–15 days from roast date.
- Best enjoyed within: 3 months unopened and 1 month from first opening. If not using right away, the beans can be stored in the freezer (freezing can extend freshness up to 1 year — beans can be ground directly from frozen without thawing).
- It is recommended to open the bag one day before use to release gas and pressure, then reseal — this allows the flavors to open up and become more rounded.
